Regarding prevention of automatic preview updates:

In Windows 11, “preview updates” are usually optional non-security updates released near the end of the month. Microsoft calls them “preview cumulative updates” or “optional quality updates”.

To stop them from installing automatically:

1. Open Settings
2. Go to Windows Update
3. Open Advanced options
4. Turn off: “Get the latest updates as soon as they’re available”

That toggle is the main setting that enrolls your PC in getting optional preview updates.
